Miso Soup

Feeling sick during flu season or simply want a warm soup for winter nights? Here’s a simple and authentic Miso Soup recipe that is great for any occasion!
Ingredients:
- 4 cups (1 liter)dashi, or low-sodium vegetable or chicken broth (instead of dashi for a milder taste)
- 2 tbsp white miso paste (milder and slightly sweet)
- ½ cup firm tofu, cut into tiny cubes
- ¼ cup cooked noodles (ramen, udon, or small pasta shapes) – optional but fun!
- ¼ cup corn kernels or carrots, finely chopped (adds sweetness and color)
- 1 tbsp mild wakame seaweed, chopped (optional, can be omitted for picky eaters)
- 2 tbsp green onions, finely chopped
Instructions:
- Heat the broth:
- In a pot, warm the broth over medium heat (do not boil).
- Cook the veggies & noodles (if using):
- Add corn, carrots, and noodles (if using). Simmer for 2-3 minutes until soft.
- Dissolve the miso:
- In a small bowl, mix miso paste with a few tablespoons of warm broth until smooth.
- Stir the miso mixture into the soup (do not boil).
- Add tofu & wakame:
- Gently stir in the tofu and wakame. Heat for another minute.
- Serve warm!
- Let it cool slightly before serving.
