Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup honey or maple syrup
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, strawberries, or blackberries)
  • Optional toppings: chopped nuts, shredded coconut, or extra berries

Instructions

  1. Preheat your oven to 350°F and lightly grease a muffin tin.
  2. In a large bowl, combine the oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the egg, milk, honey (or maple syrup), melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the berries.
  6. Divide the mixture evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 25–30 minutes, or until the tops are lightly golden and set.
  8. Let cool for a few minutes before removing from the pan.
