Campfire eclairs are a delicious twist on the classic French pastry, eclair, designed to be cooked over a campfire. Here’s a simple recipe to make campfire eclairs:

Ingredients:

Eclair dough:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • Pinch of salt

The filling:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

  • 1/2 cup semisweet chocolate chips

Instructions:

  • Prepare the Campfire: Start by building a campfire and letting it burn down to create a good bed of hot coals. You’ll need a sturdy stick or campfire skewer to cook the eclairs over the fire.
  • Make the Eclair Dough:
    • In a saucepan, bring the water, butter, and salt to a boil over the campfire or a portable stove.
    • Remove the pan from the heat and stir in the flour until a smooth dough forms.
    • Return the pan to low heat and cook for 2-3 minutes, stirring constantly, to dry out the dough slightly.
    • Remove from heat and let the dough cool for a few minutes.
    • Beat in the eggs, one at a time, until the dough is smooth and glossy.
  • Cook the Eclairs:
    • Take a portion of the eclair dough and shape it into a long, thin log around your campfire skewer. Make sure it’s secure but not too thick.
    • Hold the skewer over the campfire, turning it slowly to cook the eclair evenly. Cook for about 5-10 minutes or until the eclair is golden brown and crispy.
    • Carefully remove the cooked eclair from the skewer and let it cool.
  • Make the Filling:
    • Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Make the Chocolate Sauce:
    • In a heatproof bowl, combine the semisweet chocolate chips and heavy cream.
    • Place the bowl over the campfire or use a double boiler to melt the chocolate, stirring until smooth.

    • Slice the cooked eclair in half horizontally.
