Chicken and Black Bean Nachos
We love nachos as a tasty snack or a fun camping meal. You can easily make them at your campsite in foil packets. Here’s a simple recipe to make these tasty chicken and black bean nachos:
Ingredients:
- 1 cup cooked and shredded chicken (pre-cooked or canned chicken works well)
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup diced bell peppers (any color you prefer)
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, thinly sliced (optional, for added spice)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Tortilla chips (enough to cover the foil packs)
- Foil sheets or heavy-duty foil
Instructions:
- Prepare the grill or campfire: If you’re camping, set up your campfire with a grate or use a portable grill. Make sure you have hot coals or a medium-high flame to cook the foil packs.
- Prepare the foil packs: Tear off four large pieces of heavy-duty foil or use pre-cut foil sheets. Each piece should be large enough to hold the nacho ingredients and be folded into a packet.
- Assemble the nachos: On each foil sheet, layer tortilla chips, shredded chicken, black beans, diced bell peppers, diced tomatoes, and jalapeño slices (if using). Sprinkle the ground cumin, chili powder, salt, and pepper evenly over the ingredients.
- Add cheese and toppings: Top each foil packet with a generous amount of shredded cheese. Then, sprinkle chopped green onions and fresh cilantro over the cheese.
- Seal the foil packets: Carefully fold the foil over the nacho ingredients to create sealed packets. Make sure the packets are tightly sealed to prevent any ingredients from falling out during cooking.
- Cook the foil packs: Place the sealed foil packets on the grill or campfire grate. Cook for about 10-15 minutes or until the cheese is melted, and the ingredients are heated through.
- Serve and enjoy: Carefully open the foil packets (be cautious of hot steam), and serve the chicken and black bean nachos directly from the foil. You can also transfer the nachos to plates if preferred. Serve with your favorite toppings like salsa, sour cream, or guacamole.
Note: You can customize this recipe by adding other ingredients like corn, olives, or different types of cheese. Feel free to adjust the seasoning and spice levels to suit your taste preferences.
