🌯 Grilled Chicken & Veggie Lettuce Wraps
This healthy recipe is a great way to start your camping trip!

Ingredients
Chicken
- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- Optional: squeeze of lemon or lime
Veggies
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 small red onion, sliced
- 1 tbsp olive oil
- Salt & pepper to taste
Wraps & Toppings
- Butter lettuce or romaine leaves
- Cherry tomatoes (optional)
- Avocado slices
- Shredded cheese or feta (optional)
Sauce (optional but recommended)
- ½ cup Greek yogurt
- 1 tbsp lemon juice
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions
- Season the chicken:
Toss chicken with olive oil and seasonings. Let sit 5–10 minutes. - Grill the chicken:
Grill over medium heat for 5–7 minutes per side until cooked through. Let rest, then slice. - Grill the veggies:
Toss veggies with olive oil, salt, and pepper. Grill until tender and lightly charred. - Make the sauce:
Mix all sauce ingredients in a small bowl. - Assemble:
Fill lettuce leaves with sliced chicken, grilled veggies, and toppings. Drizzle with sauce and enjoy!
